Pesto Shrimp Pasta

(adapted from Men's Health Magazine)

Cooking Time: 25 minutes

Serves: 4

8 oz. Barilla Plus Penne
12 oz. raw or cooked shrimp
6 c. baby spinach
1 1/2 c large chopped tomato
4 Tbsp. ready-made pesto
6 Tbsp. crumbled gorgonzola

  1. Cook the pasta according to package. Drain and set aside.
  2. If the shrimp hasn't been cooked or peeled, peel and cook the shrimp in a non-stick pan using cooking spray. If the shrimp is cooked, warm the shrimp in a pan with cooking spray. (Optional: add 1 Tbsp. of pesto to the shrimp as you cook or warm it)
  3. Add the spinach and cover until the spinach wilts. Add the tomatoes and gorgonzola and the rest of the pesto.
  4. Serve sauce on top of 4 servings of pasta. Enjoy!
